It is also known as pasta wheat or macaroni wheat. It is a tetraploid species of wheat, the second most cultivated species of wheat after common wheat. Durum wheat was developed by artificial selection of the domesticated emmer wheat strains. Like emmer, durum wheat is awned, and predominantly grown in the Middle East.
